I think your best bet for an airsoft version is somehow tracking down a CYMA RPK bolt and welding a tab to the left side. I'm not sure how well a standard VFC style bolt would hold up to being pulled from the left side since the guide rod is so flimsy and on the opposite side of the receiver. Also, you'll want to watch out for dirt if you cut up the left side of the receiver cover. I scratched a cylinder when some dirt got in the right side of the receiver cover and into the cylinder port when the gun was firing. Shouldn't be a problem if you run the ports straight up and down though, just something you can't forget to check when you work on the gearbox.
The ACR handle shouldn't be too hard to replicate. Get some sheet abs, carve it up to look like the ACR charging handle, glue to bolt. I've been meaning to do it to mine for a while now, just haven't gotten around to it.
